Spaghetti with Hotdog Bits
Sometimes I’m like a child I get soo excited over the smallest things. Like this recipe. It really excited me, wanted to do more to it but for now decided to make it child friendly so no spices just some food color if you wish, mum often made us colored rice when we were kids so I decided to try that with pasta. HAPPY COOKING!!
INGREDIENTS
- Spaghetti
- Raw hotdogs cut into circular pieces
- Water for boiling
- Salt to taste
- Small knob of butter (optional)
- Food color (optional)
Method
Pierce the pasta on the hot dogs bits as bellow
Boil in salted water for about 10 mins until the spaghetti is al dente and the hot dog is cooked.
Drain and put in the batter mixing well.
If you are using food color you can choose to add the color to the boiling water to get a more instense color or soak the cooked pasta in hot water with the food color.

PENNE alla CARBONARA
I’ve mentioned this before; I never used to be a fan of pasta.
BUT
Have you seen how delicious and appetizing that photo looks????
And that is just what I did in the house so you can imagine how good it looks if it’s made in an Italian restaurant. My girl Waringa is the one who introduced me to this dish; I bet she doesn’t even know that. When I first met her she would order this dish many times when we had Sunday lunches. So the day I tasted some from her plate I was hooked.
There a few places in Nairobi you can have great cabonara. I personally like Tratoria and some restaurant at the Yaya Centre Food court whose name I don’t even know. It’s right on on the left hand corner. But their cabonara is to DIE FOR. They make it with smoked bacon and it’s simply ORGASMIC!!!
But if you choose to try this at home, you will never regret it. This is a great dish for when you just want to indulge and not care much about your hips or waistline. It comes together real quick as well in less than 20 minutes you have a meal on your table. Hope you will love it as much as I do. HAPPY COOKING!!
Ingredients
- 750 g penne (or any other dry pasta of your choice)
- 10-12 rashers of bacon
- ½ cup of onion, thinly sliced
- 2 cloves of garlic
- 500ml cream
- 2 eggs
- ½ cup Parmesan cheese
- Salt and freshly ground pepper to taste
- Chopped parsley or coriander to serve
Instructions
Boil the pasta with some salt in a large pot filled with water and cook for about 10 mins
Put the bacon in a large pan and cook till cooked. Remove and set aside
In the same pan, add the onions and sauté for about 5 mins then add the garlic and continue for a further 5 minutes. Add back the bacon
In a bowl, beat together the eggs, Parmesan, cream, and pepper
Once pasta is cooked add to the onion and bacon mixture and mix. Add in the cream and cheese mixture. Stir through. Work very quickly at this point. Add pepper. Once it’s mixed through serve immediately. Top with the coriander and extra Parmesan cheese if desired. HAPPY EATING!!

PENNE with GARLIC, OLIVE OIL and MUSHROOMS
I tend to have a love hate relationship with pasta. I never liked it much but with time I have come to realize that I did not like it because of how it was prepared. I saw this recipe a few years ago in a cookbook called “the best ever 20 minute cookbook”. I thought the title was interesting because hey, who doesn’t want a tasty meal in less than 20 minutes? The original recipe did not have mushrooms and used parsley instead of coriander (dhania) but I can’t really stand the taste of parsley, dhania is my favorite herb and at the time I was just discovering mushrooms. This dish takes about a max of 12 minutes to prepare. It looks great if you use red dried chilli which I did not have. I used oyster mushrooms but I’m sure it can work with any mushroom. Ingredients
- 400g penne (you can use any type of pasta that you prefer)
- 90ml extra virgin olive oil
- 4 cloves of garlic crushed (use more or less depending on your taste)
- 2 chillies (preferably dried red)
- A small handful of dhania (coriander) roughly chopped.
- Handful of mushrooms, sliced
Instructions
Cook pasta in a large pan of salted boiling water (this should take about 10-12 minutes.
Meanwhile, heat the oil very gently in a frying pan.
Add the crushed garlic and whole dried chilli and stir until the garlic is aromatic, add the mushrooms.
When the garlic is just beginning to brown remove and discard the chilli.
Darin the pasta and place it in a bowl
Pour on the oil and garlic mixture, add the dhania and toss vigorously till it all mixes up.
Serve immediately
