Prawn Fritters with a Spicy Honey Drizzle

Do you imagine what heaven tastes like? Like a mixture of “a nice summer day when you’re at the beach with a glass of your favourite cocktail with a tall sexy black man with shinny abs walking right past you” and “a cold winter night when your cuddled up on your couch with Mr man and a nice movie and hot chocolate” I imagine that is what heaven tastes like and that my friends is what these fritters will be like in your mouth HEAVENLY and the dip……………… my gaaawwwd don’t even know how to explain. If you enjoy your seafood then this is definitely something that you will love. HAPPY COOKING!!
Recipe adapted from Spoon,Fork, Bacon
Ingredients
- 400 grams raw prawns, peeled and cut into chunks
- 2 green onions, thinly sliced
- 2 garlic cloves, minced
- Small bunch of Dhania (coriander) , chopped
- 1 ½cups water
- 1 ½ cups all purpose flour
- 1 tablespoon unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 2/3 cup honey
- 2 Tablespoons chili sauce
- sea salt to taste
Instructions
Place shrimp, green onions and garlic into a large mixing bowl and toss together. Set Aside.
Pour water into medium pot and add butter and salt and bring to a boil. Once mixture has come to a boil, add flour and quickly stir with a wooden spoon, until dough forms. Continue to stir over medium heat, for about 3 minutes.
Place dough into a stand mixer fixed with a paddle attachment and run on medium speed, allowing steam to escape.Once most of the steam has disappeared add the egg, one at a time, scraping down the sides of the bowl after each addition. Fold in the pepper then the prawns until fully incorporated
Once oil is hot, add tablespoon sized balls of the shrimp mixture into the oil (you’ll have to do this in batches); make sure not to crowd the pan/fryer and fry each fritter for 4-6 minutes flipping halfway if necessary. Drain on a paper towel and season lightly with salt.
For the spicy honey drizzle
Combine the honey and the chilli sauce together in a bowl and serve

So I’m a girly girl. I never used to be, but somewhere between my 21st and my 22nd birthday I was beat by the ladybug and BOOM i was a girl. wearing dresses, skirts and high heels with some eye make up and lip gloss. Mexican Three Milk Cake
I’m in love with Milk and Honey . it’s an amazing blog. I read it from post one to the last one when I first started following it and I’m there every week since then just to see what she has posted. When I saw this recipe I just had to try it. It sounded ridiculously moist. Three types of milk THREE and you pour one on the cake after its baked sounded like a melt in your mouth kind of cake and true to my expectations the cake completely melted in my mouth. It was heavenly I tell you pure bliss in a cake.
The only thing I kinda did not like about this cake was the amount of sugar I used about 180 grams (recipe asked for 220g) but I think because of the sweetened condensed milk it ended up having a tad bit too much sugar in the end. So for you guys I recommend about 110g of sugar.

Ingredients
- 180g unsalted butter, softened
- 110g caster sugar (you could use less)
- 1 vanilla bean, seeds scrapped
- 1 tablespoon vanilla extract
- 5 eggs
- 225g self raising flour
- 250ml milk
- 250ml sweetened condensed milk
- 250ml buttermilk (make your own here)
- 500ml whipping cream
- sliced fruit
Instructions
Place the butter and sugar into the bowl of an electric mixer and beat until fluffy and pale, about 8-10 minutes. Add seeds and beat to combine. Gradually add the eggs, one at a time, beating well after each addition. slowly add the flour and beat until just combined. Spoon the mixture into a lightly greased 20cm x 30cm brownie tin lined with non-stick baking paper and bake for 30-35 minutes or until cooked when tested with a skewer. Using a skewer, make holes all over the top of cake and place in the refrigerator to cool completely.
While the cake is cooling, place all of the milks and the vanilla extract in a jug and mix well to combine. Pour the milk mixture over the cake and return to the refrigerator overnight. The cake will absorb the milk and you'll be left with a deliriously moist vanilla cake.
Place the cream in a bowl and whisk until soft peaks form. Top the cake with the cream. You can pile the sliced fruit all over the cake,
