Prawn and Veggies Stir Fried Instant Noodles

I love 2 minute noodles. They are life savers. BUT I have not always enjoyed them I really did not understand the fascination until around 2006 when Delmonte (funny I know) produced a lemon grass flavour that I instantly fell in love with. I really used to eat them when I was in Daystar. Later on I kept eating them and discovered the chicken curry flavour, that’s all I can stand at the moment and I enjoyed it even more. I like how quick they are. 4 mins max and u have a meal on your table.

Well later I had a housemate called Kathure who liked adding veggies, especially broccoli (YUCK) and chicken to her noodles. I found that to be very interesting but never tried it till about a month ago. It was delicious. I first tried it with chicken and red and yellow peppers and mushrooms it was nice. Last week I decided to try prawns and add a few more veggies and the outcome was great. Now that Indomie is really trying to market itself maybe you can try this out. HAPPY COOKING!!

Prawn and Veggies Stir Fried Instant Noodles

Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: 1

Ingredients

  1. 1 packet of 2 minute/ instant noddles ( I used indomie chicken curry)
  2. 150gms cocktail prawns or chicken breast
  3. 1 small onion, sliced
  4. ½ teaspoon garlic
  5. ¼ red pepper
  6. ¼ yellow pepper
  7. ¼ cup of sweet corn
  8. A handful of mushrooms (About 70gms)
  9. ½ teaspoons of cayenne pepper
  10. Oil for frying Small bunch of dhania (coriander)

Instructions

Boil the noodles according to package instructions.

As this boils add a drizzle of oil into a pan and add the onions, fry till soft then add the garlic. Fry till it starts to turn golden (if using chicken add the chicken at this point and cook for about 8mins)

Add the mushrooms and let them fry till they begin to turn color, then add the peppers and the corn till soft. Remove from the heat In the same pan add the prawns and cook for 2mins till they begin to turn pink.

By now the noodles have cooked, drain the water but leave just a little Add the noodles to the pan with the meat and veggies. Add the spices that come with the noodles and the dhania. Stir through and serve immediately. HAPPY EATING!!!

SPEEDY AS…… PEPPERED FISH

I’ve been lazy of late.

Ok maybe not lazy but pressed for time so maybe the word is busy.

I don’t seem to have time to do ANYTHING outside of my work! And I don’t seem to do enough of my work either. Don’t know what happened to the 24 hours in a day coz to me it feels more like 8hrs.

Oooh and did I mentioned? I’m not getting enough sleep so beats me where my time is going.

Anyway last week after my not so productive day I felt like a speedy “healthy” meal so I opted for fish and mango cucumber salad. Food was ready in about 15minutes start to end, how happy was I? So this is a recipe for one of those days when u wish u had a cook in your house but because life is just sooo unfair you have to fix meals yourself and you can’s stay hungry you make this. SPEEDY AS…… PEPPERED FISH

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 2

Ingredients

  1. 2 good size fish fillets or one large cut into two
  2. ½ teaspoon cayenne pepper
  3. ½ teaspoon black pepper
  4. ¼ teaspoon garlic powder
  5. ¼ teaspoon coriander powder
  6. salt to taste
  7. ½- ¾ cup of bread crumbs
  8. About 3 tablespoons of all purpose flour
  9. 3 tbsps of oil for frying

Instructions

Break the egg into a bowl; add the peppers, garlic and coriander powder and salt. Beat till well combined. Set aside

Place the Fish in the flour and coat well. Remove it from flour

Place floured fish into the egg mixture and coat well.

Put immediately into the bread crumbs and coat well.

Put about 3 tablespoons of oil into a pan. Once hot place the fish

Cook until it browns, about 4-5 minutes, then flip and cook other side. Try and flip it only once.

Kenyan Masala Chips

When we were in high school my friends and I discovered Burger Hut in Westlands that by far has the best Masala chips and cheese burgers I have ever tasted. In fact I think I should do a story on them soon 🙂 I was taught how to make masala chips a few years back by a cook who worked for my mum. I tried it a couple of times but I was never really happy with the results. I got this recipe last week on Fauzia’s Kitchen Fun and I decided to try it out the same day. I added garam masala which was not in the original recipe because most people say to add this and trust me it was delish, soo delish that I made them twice again on the weekend. I honestly LOVED it, it is not burger huts masala chips but it can compete and I am sure it would win with some people. I hope you will enjoy it as much as I did. HAPPY COOKING!!

 

MASALA CHIPS

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4

Ingredients

  1. 8 large potatoes, peeled and sliced into “chips”
  2. oil for frying
  3. 2 tablespoons butter/margarine
  4. 1 tablespoon Spanish paprika
  5. 1 tablespoon cayenne pepper ( or red chilli powder) – you can use more or less depending on preference
  6. 1 teaspoon of garlic paste
  7. 2 tablespoon tomato paste
  8. 2 tablespoon tomato sauce
  9. 1 teaspoon turmeric
  10. 1 tablespoon garam masala
  11. small bunch of coriander
  12. salt to taste
  13. some water (optional)
  14. lemon (I did not use this because I had none)

Instructions

Heat the oil in a pan and when hot put in the potatoes and cook till they are soft, remove from the oil, drain and let cool for about 5 mins

Reheat the oil and put back the chips to cook through. This makes them crispier (works with any food your deep frying)

As the chips are cooking for the second time place the butter/margarine into a larger pan and melt it. Once it has melt switch off the heat.

Add all the other ingredients (except from the water and coriander) into the melted butter/margarine and mix well.

Turn on the heat and cook till the sauce thickens

You can add the water if you like your chips saucy if not do not add the water.

Once the chips are cooked place in a kitchen towel to drain excess oil then toss them into the sauce and mix until well combined.

Turn off the heat, squeeze in the lemon and add the coriander

Serve when hot. HAPPY EATING!
