Double Chocolate Banana Bread (Bake 1)

Don’t I just love the sound of DOUBLE chocolate? I guess it did not really matter what came after the chocolate but it was a great bonus that it was banana. I enjoy my banana bread so adding double chocolate to it made me a happy lady. I made this once and was sold. I also brought it to a going away party for one of my colleagues and I got quite a number of compliments and many asked if they could carry some home. What I loved most about this cake was how fudgy and moist it is. The flavour is mostly chocolate with a good burst of bananas. It’s divine, heaven in your mouth. I doubt I’ll ever make plain banana cake again. This recipe is definitely a keeper. This is my 1st post this year on the 30 bakes in 2013 so 29 more to go. Wish me luck 🙂 HAPPY BAKING!!
Ingredients
- ½ cup sugar
- 2 eggs
- 1/3 cup oil
- 3 bananas, mashed
- 1 ½ teaspoon vanilla essence
- ½ cup cocoa
- 1 ½ cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
Heat the oven to 180 degrees. Grease the bottom of a loaf pan (I made double this recipe and used a bigger pan)
Beat the sugar, eggs and oil in a large bowl until combined. Beat in the banana and vanilla in a separate bowl at low speed.
Sift the flour, cocoa and baking soda together in a different bowl, add to the banana mixture a little at a time till combined.
Stir in the chocolate chips. Spoon the batter into the pan and bake for about 60-70 mins.
Let the pan cool for about 10 mins, remove from the pan and cool completely.

I got the recipe/ instructions from Can’t Stop Making Things it’s a very interesting site, you should stop by.
The original recipe asked for chocolate chips but because foodie in the desert is all about making things more accessible and easier for all of you to make I used normal Cadbury’s milk chocolate. I reckon if you used chocolate chips or dark chocolate it would really be tasty but this is more expensive and less accessible to most

INGREDIENTS
- 300 gms chocolate of your choice (I used Cadbury’s milk)
- 750 gms strawberries (Make sure they vary in size, large, medium, small)
- A party hat
- Wax paper or baking parchment
- A plate or flat surface
METHOD
- Wrap the party hat with the parchment/wax paper. Fasten with tape. Fill the inside of the hat with old newspaper to make it steady and place it on a plate or cake base.
4. Now place the base of the strawberry in the chocolate then place it on the already prepared “party hat”. Make sure you start with the largest
5. Once you get to the top apply chocolate on the tip then put the remaining chocolate into a plastic bag, snip a very small hole at the corner and pipe a few stars onto a wax paper, put it into the fridge till it hardens,
6. remove from the wax paper carefully and use more extra chocolate to stick the stars onto the tree.HAPPY EATING!!!!
Pumpkin Bread
I know………………. I know…………….I know… That sounds pretty damn scary for anyone who grew up in Kenya. As I wrote in my previous posts on Pumpkin Puree and Pumpkin French Toast Kenyan just don’t like pumpkins. BUT….. I served this cake to around 17 people, all who would swear their utter loathe for pumpkins and they all……………. LOVED IT!!! To be honest I was surprised. I really was not expecting this bread/cake to taste as good as it did. And I made it over and over again and loved it some more each time. First few time I made this I did not have nutmeg nor cloves so I replaced that with more cinnamon and a little more ginger and it was great. Nutmeg, cloves and all spice all have very strong flavours so if you don’t like it you can skip it altogether. I think next time I make it I’ll skip the nutmeg. This bread is nice and moist. No need really for any extra spread but if spread tinkles your fancy, go for it. I really hope that you will go past the fear of pumpkins and make this delicious bread. Ingredients
- ½ cup butter
- 2 eggs
- ½ cup brown sugar
- ½ cup white sugar (I did not use this I added 1 tablespoon of brown sugar instead)
- 1 teaspoon vanilla extract or essence
- 1 cup pumpkin puree
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon ginger
- ¼ teaspoon all spice or cloves
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup natural yogurt
- 1 ½ all-purpose flour
Instructions
Pre heat oven to 180 degrees.
Cream butter and sugar till light. Add eggs and vanilla till creamy.
Add pumpkin and spices, combine well. Add baking soda, salt yogurt, and flour, mix until the batter is smooth.
Pour into a greased loaf pan and bake for 1 hour or until a skewer comes out clean when inserted into the center
You can use mixed spice if you do not have all the individual spices but it will NOT be the same.
I also generally find most cakes too sweet so I always put half the sugar. I found that 1/2 cup + a table spoon was enough your free to try with the two sugars
