Prawn Fritters with a Spicy Honey Drizzle

Do you imagine what heaven tastes like? Like a mixture of “a nice summer day when you’re at the beach with a glass of your favourite cocktail with a tall sexy black man with shinny abs walking right past you” and “a cold winter night when your cuddled up on your couch with Mr man and a nice movie and hot chocolate” I imagine that is what heaven tastes like and that my friends is what these fritters will be like in your mouth HEAVENLY and the dip……………… my gaaawwwd don’t even know how to explain. Recipe adapted from Spoon,Fork, Bacon
Ingredients
- 400 grams raw prawns, peeled and cut into chunks
- 2 green onions, thinly sliced
- 2 garlic cloves, minced
- Small bunch of Dhania (coriander) , chopped
- 1 ½cups water
- 1 ½ cups all purpose flour
- 1 tablespoon unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 2/3 cup honey
- 2 Tablespoons chili sauce
- sea salt to taste
Instructions
Place shrimp, green onions and garlic into a large mixing bowl and toss together. Set Aside.
Pour water into medium pot and add butter and salt and bring to a boil. Once mixture has come to a boil, add flour and quickly stir with a wooden spoon, until dough forms. Continue to stir over medium heat, for about 3 minutes.
Place dough into a stand mixer fixed with a paddle attachment and run on medium speed, allowing steam to escape.Once most of the steam has disappeared add the egg, one at a time, scraping down the sides of the bowl after each addition. Fold in the pepper then the prawns until fully incorporated
Once oil is hot, add tablespoon sized balls of the shrimp mixture into the oil (you’ll have to do this in batches); make sure not to crowd the pan/fryer and fry each fritter for 4-6 minutes flipping halfway if necessary. Drain on a paper towel and season lightly with salt.
For the spicy honey drizzle
Combine the honey and the chilli sauce together in a bowl and serve

There things that really remind me of my childhood. You know those days when mum had lots of energy to feed us and make us lots of dishes. This is one of them. She’d make this on special nights once in a while and my brothers and I would eat and eat and EAT. I loved it. I love the taste of the potatoes how they are infused in the flavours of bacon and onions. I made this on Sunday morning for breakfast after years and I really stuffed myself and made it twice that day. I really hope you will love this as much as I do. I hope it will bring lots of love and great memories like it did in our home. It’s a good brinner (breakfast for dinner) option. HAPPY COOKING!!

- 1 kg potatoes (peeled and cubed)
- 200grams streaky bacon, cut into big chunks (I guess you can use any other bacon I just prefer this one)
- 1 large onion
- Small bunch of Dhania
- 1 tablespoon garlic powder
- 1 teaspoon rosemary leaves
- 1 teaspoon aromat (optional)
- Salt to taste
- Oil for frying

Boil the potatoes in water mixed with the garlic powder, rosemary and salt. Boil till just cooked, when you can pierce with a fork but the potato will not fall apart. Drain the water and set aside
Put the oil in a pan, about 4-5 tablespoons. Once hot put in the potatoes then the bacon and the onions. Mix well. Ensure your pan is big enough to fit all these comfortably the sprinkle with the aromat and cook till the potatoes are browned, bacon is cooked and the onions are translucent. Serve immediately

There things in life you do not see yourself enjoying. For me canned tuna was one of those. I tasted it a long time ago and I really did not like it. I later resorted to taking the “flavoured” (for lack of a better word) one eg, mango salsa, thousand island, coronation etc. I stayed like this for years till some time in 2011 when I had dinner at my pal Liz’s house and she had made fried canned tuna with ugali that I really enjoyed. I remember thinking to myself that that was a new discovery but I did not think of it again till some time last year when I ate the same dish at my pal Mo’s house.
Now I’m not saying anything (-: but Mo’s tuna was delicious. She had put in some onions and tomatoes and fish masala. Then she served it with sukuma and ugali….. my GAWD that food was tasty and I just had to try it out myself. I remember I even borrowed her fish masala on that day I went to Kakuma town the next day and bought the tuna and that night I fell in love with the dish all over again.
Ingredients
- 1 canned tuna
- 1 medium onion (sliced)
- 1 large tomato or 2 small (chopped)
- 1 tablespoon crushed garlic
- 1 teaspoon chicken masala ( I use nature’s own)
- Small bunch of chopped dhania
- Salt, pepper and chilli to taste
Instructions
If your tuna is canned in oil open the can slightly and empty some of the oil into a pan and discard the rest. Use this oil to cook. Add in the onions and cook till translucent then add in the garlic till its aromatic.
Once the garlic is aromatic add in the tomatoes, fish masala, salt, pepper and chilli and cook till the tomatoes are soft then add in the Dhania cook for 2 mins then add in the tuna. Mix well and let to simmer for 3-4 minutes then serve with ugali.
