The weather  in Nairobi  is all sorts of crazy this month. Isn’t June meant to be cold and gloomy? Shouldn’t we be feeling the need to cuddle up under a blanket with some hot cocoa and watch a movie. Perhaps not leave the said blanket for a whole weekend? I love cold days, when I have nothing else to do but bum.

Unfortunately doesn’t seem like we will have much of that this month so let’s make the most out of this weather and make some ice cream. Orange and chocolate are a match made in heaven. This ice cream is super rich and the orange notes works beautifully. You do not really need an ice cream maker for this though having one would save you loads of standing time.

It is surprisingly easy to make and with ice cream once you have the custard right you can experiment with whatever flavours you fancy. But let us start with just this one for now.

Double Chocolate and Orange Ice Cream

Prep Time: 4 hours, 30 minutes

Cook Time: 40 minutes

Total Time: 5 hours, 10 minutes

Yield: 1 litre

Ingredients

  1. juice and zest from 2 oranges
  2. 180g plain chocolate
  3. 450ml milk (not skim)
  4. 5 egg yolks
  5. 125g caster sugar (you can blend granulated sugar if you don't have)
  6. 300ml double cream , lightly wipped
  7. 1/2 cup chocolate chips (optional)

Instructions

Boil the juice till you have about 2 tablespoons. Add the zest, switch off the heat and set aside as you allow it to infuse.

Bring the milk to just below boiling point remove from the heat. Whisk the egg yolks with the sugar until thick then whisk in hot milk.

Return to the mixture to sufuria (sauce pan) and continue to cook over very gentle heat stirring continously with a wooden spon until it forms a thick custard that coast the back of the spoon and leaves a trail. Do not allow to come to a near simmer as it will curdle.

Stir the chocolate into the custard and strain (sieve) into a bowl. Chill until cool then fold in the whipped cream.

Pour into an ice cream machine if using or

Freeze the mixture in a freezer for about an hour, remove and whip with a folk, freeze again for about 1.5 hours then whip again with a folk repeat this a total of 3 times then stir in the chocolate chips then allow to set. This breaks up any ice crystals.
