Easy Caramelized Onions, Ginger and Soy Pork Chops
What would the world be with out pigs? That would mean we do not have pork meat and most importantly that means a world with no bacon, NO PORK & BACON!!!! How would we survive? Would we laugh? Would there be peace in the world? I think pork is quite an integral part to world peace, right?
I love pork in any form, stir fry pork, pork fry (Kenyan way of cooking, cooked in onions and spices no water), pork choma ( bbq pork) slow roast pork, ham, pork sausages, anything pork I will eat or at least try. I haven’t had pork ears or hooves mostly because it is not something we eat in our culture but I would actually like to try it.
If you are a pork lover then you need to try this recipe, its really easy a tad bit time consuming because of the onions but in the end it is soooooo worth it. Ginger and soy are a match made in heaven, works well with any kind of meat. This recipe would be fantastic with chicken. My Mr really likes it that way actually. I think it is one of his fav meals with some ugali and kunde (local greens).

Ingredients
- 1kg pork chops or cut of your choice
- 2 cloves garlic, crushed
- 2 cm ginger, crushed
- 2 tablespoon light soy sauce
- 4 onions, sliced
- 2 teaspoons balsamic vinegar
- 1 tablespoon brown sugar
- oil or butter for frying
- 3 cm ginger, crushed
- 1/4 cup of light soy sauce
Instructions
Marinate the pork chops in the 2 garlic cloves, 2 com ginger, 2 tablespoons of soy for minimum 30 mins but up to 24 hours in the fridge.
30 minutes before you plan to start cooking take the pork out of the fridge and bring it to room temperature.
As the pork rests put your onions in a pan with some oil and salt on low heat and cook it SLOWLY for about 20 min. Add the brown sugar and balsamic vinegar, mix well and continue to cook for a further 10 minutes until sticky and caramelised.
Once pork has come to room temperature, put some oil to a pan and heat till hot. Drain pork but reserve the marinade. Add it to the hot pan and cook undisturbed for about 4 minutes per side in order to get a good brown on the chop.
Remove the pork from the heat and place aside. Add the remaining marinade and the rest of the ingredients. Let this boil for about 2 to 3 minutes then add back the pork. Coat the chops completely in the sauce. Cook for 2 minutes and serve
Perfect with ugali or potatoes
