Easy Roast chicken in BBQ sauce
If there is one thing I love it must be easy to make meals. Those that require very little standing time and yet are still tasty. For me this were my go to recipes when I was hangovered or just on a lazy Sunday. But ever since becoming a mum such kind of recipes are my everyday meals. Quick, easy and tasty.
For the chicken to make cooking it even faster you can marinate it before you freeze it so once you thaw it you just throw it into the oven. What transforms this dish though is the sauce. It is super easy to make too, All ready sauces, just mix and bring to a simmer mix with the drumstick and serve. Easy, Quicky, Tasty.

Ingredients
- 1 kg drum sticks
- 4 cloves of garlic, minced
- 5cm piece of ginger, crushed
- Salt
- 1 tb oil
- BBQ Sauce
- 2 cups Ketchup
- 1 cup choma sauce
- 1 cup light brown sugar
- 1 tablespoon soy sauce
- 2 onions finely chopped
- 2 cloves of garli, crushed
Instructions
Mix the drumsticks with the ginger, garlic, salt, and oil. Let this marinate for at least 20 mins but you an leave overnight or even freeze to use later.
Pre heat the oven to 180 degrees. arrange the drumstick in a baking sheet making sure they do not overlap. Place in the middle rack and roast for 45mins to one hour flipping them half way through. They are ready when you poke the thickest part of the drumstick and the juice is clear.
Mix all the ingredients under sauce. bring to a boil then let simmer for 5 mins before adding the cooked drum sticks ensuring they are well coated.
