Lucy’s Vegetable Frittata
I love quickies, don’t you? how fast they are and how good they end up being in the end? They are my absolute favourite thing in the world I tell you. Hahah NO! not that kind of quickie, although I love that one too, just get your mind out of the gutter for this post. I mean quickie dishes. Those that you can put together in less than half an hour and look like a stellar chef. Like this frittata it is so easy to put together and so easy to customize to your taste.
A frittatta is basically an omelette on steroids. It is eggs, potato, veggies, some animal protein if you wish. I love to add bacon to mine. Cook then bake for a short time if you wish then serve. How simple is that? This is a very simple and quick dish to master but for some reason I really struggled to get it right. A few years ago I mastered the art but for some reason lost my touch. Quite retarded I know but we all struggle through making one dish or another and sometimes it is the simplest of dishes. After a lot of struggling over the last few months I decided to convince my girl Lucy to show me how it is done one morning.
Now Lucy is what we Kikuyus call “mutumia ngatha” I have no idea what the translation to that is but it is somewhat a “perfect wife” the name actually comes from the woman described in Proverbs 31. She is one of those that do a whole spread for breakfast, cook, iron and clean. Someone needs to grab this woman already. Sometimes I look at her and wish I was that diligent in my house duties. Anyway Lucy made me breakfast and as she did that I took down notes to share with you guys and here is her amazing vegetable frittata. Remember you can add bacon or shredded chicken or sausages to it.

Ingredients
- 4 medium sized potatoes, cut into bite sized pieces
- 2 large onions, sliced
- 2 garlic cloves, crushed
- 1 coloured capsicum, sliced
- 2 chillies, optional
- 6 eggs
- small bunch of dhania
Instructions
Put butter in a pan and let it melt. Once melted put in the potatoes and let them brown. If you find the potatoes are sticking to the pan add a few tablespoons of water.
Once potatoes are browned add onions and garlic and cook till translucent and fragrant.This is when to add your bacon, sausages or shredded chicken if you are using either. Then add the capsicum and chilis and cook for 2 minutes.
As that cooks beat the eggs in a bowl and add salt and pepper to taste. Add the potato mixture to the eggs/ Add in the dhania and mix well.
Add oil to the pan and heat through. Add the egg potato mixture and allow the bottom to set.
Cover and lower the heat. Cook for 10 minutes covered then turn the fritatta
You can do this using a plate to turn the frittata over and back to the pan.
Cook for 3 to 5 minutes then serve while hot. You can sprinkle with shredded cheese right after you take it out of the pan.
If you have an oven after you let the egg mixture set and it starts to set at the top place it in the oven with the top heat only and broil for about 4 to 5 minutes until it begins to turn brown. If you are using cheese you can sprinkle after 4 minutes and return to the oven till the cheese is melted.
Pricing: an egg costs on average Ksh 12 (12c) bringing it to Ksh 72, potatoes go for Ksh 20 for about 4 to 5 potatoes, Ksh 10 per onion, Ksh 20 for a whole bulb of garlic so Ksh 5 for what we used and Ksh 5 for the dhania, Ksh 5 for the capsicum. !Total Ksh 112. Ksh 28 ($28c) per person
If you use bacon and cheese the total cost will go up by Ksh 300 making it Ksh. 412 and Ksh 103 per person
