Pumpkin Butter Pancakes
I have said it before, I hated pumpkin almost all my life. Growing up I’m not sure which kid did not hate pumpkin. In November 2012 I decided to try a few recipes with pumpkin. I did a butternut soup, pumpkin bread, pumpkin french toast all which people loved. Anyone who tasted it and anyone who made it for their family absolutely loved it. It’s amazing to have veggies mixed in your deserts and breakfast. It’s a great way to make your kids eat their vitamins too.
It’s amazing how much a perception of a certain product can be such a hindrance. Since I started my food product line the reception has been amazing. People love the products but one thing that is a hard sell is the pumpkin butter. It costs only Sh 200 as an introductory price. But even with the price people are still skeptical to try it leave alone buy it. I have had so many clients refuse completely to taste the pumpkin butter because of the perception they have of pumpkin. The best thing about my pumpkin butter is that once they have a taste of it, they want it. They take 2, 3, 4 jars, they buy for themselves and their friends. It’s amazing the change of heart, what is even better is when this friend who receives it as a gift writes about it on Facebook and gets others to buy.
The Pumpkin butter is simple, pumpkin lots of spices, honey, apples. Adding this to your pancakes just makes it so much tastier. In case you don’t have the pumpkin butter you can use pumpkin puree and add some mixed spice and cinnamon. You babies will love this I swear.

Ingredients
- 1.5 cups All Purpose flour
- 1.5 teaspoons baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 egg
- 3/4 cup pumpkin butter
- 1 cup milk
- oil or butter for cooking
- Maple syrup or hiney for serving (optional)
Instructions
Mix all the dry ingredients in a bowl and create a well in the middle
Mix the remaining ingredients in a separate bowl making sure they are completely well blended.
Add the wet ingredients to the dry, whisking well and working fast. Make sure there are no lumps caused by the flour.
Heat up a pan to medium to slightly hot. pour in some oil or melt some butter. Pour in 3 tablespoonfuls of the batter into the pan. Cook until bubbles appear on the top and the bottom is browned. Flip and cook for other side is browned typically around 2 mins.
