Red velvet Cake with Cream Cheese Icing and Oreo Cookies
Sometimes, just sometimes messy things look so sexy. Sometimes, just sometimes messy things look so delicious. And in these few instances the messy sexy looking, delicious looking things are actually so so so tasty.
Like this cake, how messy does it look? like someone just took 3 amazing tasting things and threw them together to form heaven…… in my mouth!
Last week one of my brothers, Nyaga, asked me to make for him a birthday cake that was not my signature dark chocolate cake. He also did not want my carrot cake which every single person loves why? because others had already gotten him both cakes on his actual birthday. He wanted something different for his party. I was quite lost. I had no idea where to start. By Friday I still had no idea what to make and the party was on Saturday. I thought of a black forest cake but LORD that was just too much work for me, I thought of asking my neighbour, friend and baker Angie to make me a cake I even called her. But before I could pay I saw this cake on my Facebook timeline. It looked magnificent!
The post was by my girl Freshiah who recently started a blog Just Fresh Bakes and she makes these amazing cakes. And when I saw her post I had a eureka moment. I had all the ingredients for the cake just needed to buy some stuff for the icing and BAM! my brothers cake will be ready. And not only that since I was making layered cake it would be a great post for or Onja post this month.
Its pretty easy and way cheaper than buying it. I did a 2 kg cake. Keep reading you will be amazed how much it cost me.

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 2 Tablespoons cocoa powder
- 1.5 cups sugar (more if you wish)
- 1 cup vegetable oil
- 2 eggs
- 1 cup maziwa mala (or butter milk)
- 2 teaspoon of vanilla extract or essence
- 2 teaspoons of PARADIP 4R red food coloring, must be paradip available from walibahi on biashara street in town.
- 1 teaspoon of white distilled vinegar
- ½ cup of prepared plain hot coffee
- 1/2 cup of butter, room temperature
- 1 cup cream cheese room temperature
- 2 to 3 cups of icing sugar (also known as confectioner's sugar), sifted
- 1 teaspoon of vanilla extract
- 2 packs of oreos. the big pack
Instructions
Preheat oven to 180 degrees centigrade
In a medium bowl, whisk together flour, baking soda, baking powder, cocoa powder and salt. Set aside.
In a large bowl, combine the sugar and vegetable oil. Add in the eggs,mala, vanilla and red food coloring until combined. Stir in the coffee and white vinegar.
Combine the wet ingredients with the dry ingredients a little at time, mixing after each addition, just until combined.
Generously grease and flour two round, 9 inch cake pans with shortening and flour.
Pour the batter evenly into each pan.
Bake in the middle rack for 30-40 minutes, or until a toothpick inserted in center comes out clean. Do not over bake as the cake will continue to cook as it cools.
Let pans cool on a cooling rack until the pans are warm to the touch.
Slide a knife or offset spatula around the inside of the pans to loosen the cake from the pan.
Remove the cakes from the pan and let them cool.
Frost the cake with cream cheese frosting when the cakes have cooled completely.
Icing
Using an electric mixer, beat the cream cheese and butter together until completely smooth, about 3 minutes on medium speed. Use a rubber spatula to scrape down the sides of the mixing bowl to ensure that the mixture is mixed evenly.
Beat in the vanilla extract. With the mixer running, slowly add in the icing sugar. Keep adding the icing sugar till you get your desired level of sweetness and thickness.
Use a blunt knife or spatula to spread the frosting, once you spread on one layer crush some oreos and spread them on the 1st cake. Layer the second cake and repeat. Spread the cream cheese then place oreo on top.
Finally melt the dark chocolate in a microwave for 15 seconds then continue in 5 second intervals stiring through after the 5 secs till it is completely melted.Pour on top on the oreos.
