As I said yesterday, I love garlic and anything that has garlic in it. My other love or maybe my first love? Potatoes. Gosh, if you ever wanted to kill me by poisoning my food, just make some amazing scalloped potatoes and feed me, I will chow that thing down faster than Bolt.

So if I love potatoes, and I love garlic then imagine what kind of mouthgarsm I get from a mix of the two? If you love both of them too close your eyes and imagine the wonderful aroma of garlic, a nice mild sweet taste of roasted garlic mixed in with creamy potato mash and your stew to boot. Doesn’t that sound like heaven?

Sigh!

Garlic Potato Mash

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Ingredients

  1. 1 kg potatoes, ask your grocer which potato is best for mashing, peeled and quartered
  2. salt to taste
  3. 1 roasted garlic, mashed
  4. 4 tablespoons of butter
  5. 1/2 cup of fresh or sour cream

Instructions

Place potatoes in a sufuria (pot) of tap water. Add salt then bring to boil. Boil till the potatoes are soft enough to break with a fork. Drain.

Add in the butter, cream and garlic and mash through. Add salt to to taste if need be.
