Spicy Ginger Cookies
Growing up I never understood anyone who did not have a sweet tooth. I mean, how do you survive in this world without a lot of sweet in your life? How could life be colourful and worth living without sugar in it? I just did not get it.
Back then I would go to Java House and order for a double ice cream and a chocolate fudge cake and EAT IT ALL!!! yap no sharing, no doggy bag. All that by my self. Fast forward a couple of years later I eat a fudge cake in 3 sittings. If I really try I can do 2 sittings. The sugar just is a bit much for me. I never thought this day would come, for me this is a sign of aging. i guess soon I will be taking tea with no sugar *sigh*
Well. these cookies are perfect for those who want something sweet but not too sweet. They are the perfect in between. They are great with a hot cuppa tea. Great for a chilly evening.

Ingredients
- 3/4 cup unsalted butter, at room temperature (margarine can work too)
- 1/2 cup brown sugar
- 1 large egg
- 1/4 cup molasses (available in supermarkets)
- 2 cups flour
- 2 tsp baking soda
- 1/4 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- extra sugar for rolling
Instructions
Set the oven to 180 degrees centigrade
Cream the butter and sugar until fluffy.
Add the egg and molasses.
Add the dry ingredients and mix until blended.
Chill in the fridge for about 30 mins. you can also roll and double wrap in c;ing film and freeze at this point for later use.
Form or scoop balls the size of a small walnut. Roll in granulated sugar to coat.
Place on an un-greased or parchment paper lined baking sheet 2" apart. Bake for 10-12 minutes.
