The first time I posted about chicken meatballs so many people were in shock. For some reason Kenyan’s do not seem to know that chicken mince meat exists. You can mince any type of meat there is and those that can’t really be minced like fish you can flake.  But with chicken it is so easy all they do is take mostly the breast of the chicken and mince. It is so diverse to use, make your bolognese sauce, make burgers, make meatballs etc.

This recipe is super easy. The chicken meatballs can be made in advance and frozen either cooked or uncooked and the jam comes ready made for you. How easy is that? If you love to freeze food like I do this is one of those recipes you can precook then when you have those random visitors you just chomoa the meatballs toss in some sauce and voila you have impressed guests.

You can also use the meatballs as a base recipe for any other dish. Doesn’t have to be cooked in this sauce. You can make a tomato based or cream based sauce, you can toss in honey and soy. So much diversity from this one dish. I use Kenchic chicken mince coz it is readily available in supermarkets and also at my local KMC (Kenya meat Commission) butchery. Sweet Chilli Chicken Meatballs

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4 to 6

Ingredients

  1. 500g Kenchic Chicken mince meat
  2. 3 cloves of garlic
  3. Small piece of ginger
  4. Small bunch of basil, chopped
  5. Big bunch of dhania chopped
  6. 1 teaspoon chicken masala
  7. 2 cups of bread crumbs
  8. 1 egg
  9. 200g jar of African Kaya’s sweet chilli sauce
  10. Oil for deep frying

Instructions

Mix all the ingredients in a bowl with only HALF the dhania. Form this into balls of whichever size you would like, place on a platter and chill in the fridge for 20 to 30 minutes. You can also freeze them at this point for later use.

Remove from the fridge. Heat the oil till hot and cook your meatballs for about 8 to 10 minutes turning it around to ensure even cooking. Alternatively heat your oven to 180 degrees and bake your meatballs for about 30 minutes turning half way. Please note that this cook times are for meatballs the size of a tablespoon so it will be longer if you make giant meatballs. You can also freeze your meat balls at this point.

Place the sweet chili sauce in a sauce pan, add the soy sauce and dhania let this cook for about 5 mins till it starts to boil. Add in the meatballs and make sure they are coated and warmed through.

Serve hot.
