There things that really remind me of my childhood. You know those days when mum had lots of energy to feed us and make us lots of dishes. This is one of them. She’d make this on special nights once in a while and my brothers and I would eat and eat and EAT.  I loved it. I love the taste of the potatoes how they are infused in the flavours of bacon and onions. I made this on Sunday morning for breakfast after years and I really stuffed myself and made it twice that day. I really hope you will love this as much as I do. I hope it will bring lots of love and great memories like it did in our home.  It’s a good brinner (breakfast for dinner) option. HAPPY COOKING!!

 

Roasted Potatoes with Bacon and Onions

Cook Time: 10 minutes

Roasted Potatoes with Bacon and Onions

Ingredients

  1. Ingredients
  2. 1 kg potatoes (peeled and cubed)
  3. 200grams streaky bacon, cut into big chunks (I guess you can use any other bacon I just prefer this one)
  4. 1 large onion
  5. Small bunch of Dhania
  6. 1 tablespoon garlic powder
  7. 1 teaspoon rosemary leaves
  8. 1 teaspoon aromat (optional)
  9. Salt to taste
  10. Oil for frying

Boil the potatoes in water mixed with the garlic powder, rosemary and salt. Boil till just cooked, when you can pierce with a fork but the potato will not fall apart. Drain the water and set aside

Put the oil in a pan, about 4-5 tablespoons. Once hot put in the potatoes then the bacon and the onions. Mix well. Ensure your pan is big enough to fit all these comfortably the sprinkle with the aromat and cook till the potatoes are browned, bacon is cooked and the onions are translucent. Serve immediately

Bacon Pancakes

So I have been babysitting twins for about two weeks now and let me tell children are a handful. I feel like I have been shoved right smack in the middle of motherhood without actually going through the whole being pregnant and giving birth phase. It is a tiring job being a mummy and I give respect to all you mummies out there. But on the other side kids are amazing. I fall in love with the girls a little more each day. When they smile, when they turn, when they fuss for attention its beautiful, I look forward to having my own babies someday.

So today’s recipe is pretty easy. A little mix of sweet and salty. Its not a recipe really but more of a how to. Just make your pancake batter as you usually do then pour it on top of cooked bacon and that’s it.  HAPPY COOKING!!

 

INGREDIENTS

Flour

Milk

Sugar

eggs

Cinnamon (optional)

Bacon

 

Method

  1. Make your pancake batter as you usually do; mix the flour, sugar, eggs,  and milk and cinnamon.

Have you joined Pinterest?? It’s soooo AMAZING you find the coolest stuff there like these beautiful and creative bacon bouquet. HOW COOL IS IT????? I mean don’t you think your man would love to get a bunch? I thought this would be a perfect surprise valentines present for your man/hubby/fiancé or even that guy you’re trying to bag hehehe.

I showed the photo to a few guys and the reaction was all the same I WOULD LOVE THIS. And the best thing about this is that you do not have to limit it to just Valentines. Use it for his birthday, father’s day, X-mas, to say thank you or I love you, or just because you’re trying to bribe him into buying you that pair of overly expensive shoes or even to move into that house/ neighborhood you want to move into or better yet get him to agree with your choice of school for the kids. CLEVER haaa!! Of course you need to add to the bag of goodies if bribing is your intention though, but if you just want to make him smile this will work. Ooh and men this is easy enough for you to make for your woman too. And best thing she will REALLY appreciate the effort that you made to make them so you definitely be getting bonus points.

 Edit 2015: I lost my data when moving from foodieinthedesert.com to africankaya.com I have therefore had to get step by step photos from Our Best bites. The 1st and last photos are mine though. 

What you need

  • Bacon, preferably streaky
  • Toothpicks
  • Plastic flowers
  • Baking sheet lined with foil.

So start with a packet of bacon. I used 200gms got about 10 big flowers but I doubled them up so you can get 20.

Roll a strip of bacon up. You want to have the meaty side of the bacon on the top of the flower and the fatty side at the bottom. I rolled two strip. So I rolled one then the other on top to make a larger flower.

Using two toothpick poke through the bottom of the roll (fatty side). Try as much as you can to get very close to the end as possible. This helps the bacon hold shape and also to sit flat on the baking tray.

Put the bacon on a foiled baking dish. Pop then in the over at 200 Degrees for 25-30 mins but keep checking from 20 minutes depending in your oven

Then you end up with this beautiful babies.

As they cool, take the cheapest plastic flowers you can get. Make sure the flowers can come off and leave you with a stalk to set your bacon on. Remove the red (flower) parts and remain with the stalks.

Rose-form

Place the bacon on the stalks and voila you are done.
