Man Pleasing Coconut Tilapia Fish

Growing up fish was something we had but I did not enjoy. I am not sure exactly when this started but for the longest time I did not have the skin of the fish, then I stopped having whole fish I think for almost 10 years. I just for some reason thought it was grossish.
Then 3 years ago I went to visit my girl Mona in Kampala. On the day I was living we passed Tuskys to get some gonja crisps (plantain). Mona bought some fish and they were all packed together. Well, you can guess what happened, I found my self with fish in Nairobi. I obviously could not throw it out after it traveled all the way now could I?
Hubby was super happy about it, that was the day we started calling it something close to the name above. The actual name we call it is PG LOL but the point is it it pleases men.

Ingredients
- 1 large fish, deep fried or baked
- 2 onions
- Oil for frying
- 3 cloves garlic, crushed
- 5 cm ginger, crushed
- 5 tomatoes, diced
- 2 teaspoons fish masala
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 250 ml coconut milk
- Salt to taste
- small bunch of dhania, chopped
Instructions
Cook the onions till soft, add the ginger and garlic and cook till fragrant. Add the tomatoes and stir then add the salt, stir then reduce the heat mashing the tomatoes with your cooking spoon till its soft and it start removing its own natural oils.
Add the spices, let it cook for 5 mins then add the coconut milk. bring this to a simmer then add the dhania. I would typically then add in my fish till it warmed through then serve
However, Juliet Atieno on foodies club Nairobi on Facebook showed me a new way. Warm your fish then on a plate pour half the sauce place the fish and top with sauce. Serve with Ugali

Guacamole

Hi Foodies, do you love avocados? I love avocados but I really feel like they are over rated. Ok, maybe over rated is not the word but I bet some of you know what I mean. Yaani 3 days do not pass without me seeing a meme somewhere about how amazing and life changing avocados are, LOL. But to be honest, avocadoes are quite awesome right?
Eat them with githeri or rice, or just plain with salt or sugar, I love mine with sugar they are awesome. One of my fav ways to have avocado is in guamole. Now guacamole is not kachumbari with avocado, it kinda is but not really. It defers in some basic ingredients and method if doing it. Plus it is much tastier.

Ingredients
- 3 tomatoes (flesh removed and chopped)
- 1/2 onion, finely chopped
- Juice of 1 lime
- 2 garlic cloves, crushed
- 2 avocados, flesh removed and slightly mashed
- Salt and pepper to taste.
Instructions
it is super easy. just mix it all up. You can add chilli if you like.
If you are premaking this do not add the tomatoes until you are ready to serve and wrap with cling wrap to ensure oxygen does not get it
