Strawberry Yogurt Popsicle

Strawberries are my favourite fruit or flavour in deserts or drinks. I love strawberry yogurt, strawberry juice, strawberry ice-cream, frozen yogurt, sorbet, liqueurs etc so a few months ago when I saw so many popsicles on Pinterest I just had to try one. I tried this in July when the weather was not to popsicle friendly but now that it has been so hot I think the timing is perfect.

The best thing about this recipe is that you can substitute the strawberries for any fruit of your choice and if you do not like yogurt skip it and just add more water and fruit to make up and have a sorbet popsicle. If you like you can also substitute the sugar for stevia or splenda or any other sweetener to reduce on the calories. Not sure how honey or molasses would work though so if you do try it with them, do share your experience.

This is also a great afternoon snack for kids and way healthier and better for them than the ice creams in the stores that are sugar packed. So now that sun is out till February do try this and experiment with different fruits. HAPPY MAKING!!

NB: if you do not have popsicle molds you could use; paper cups, aluminium cupcake holders, recycles yogurt cups, small glasses (be careful with this). For the popsicle sticks you can buy the sticks doctors use to check your throat 🙂 or alternatively use a teaspoon sized plastic spoons.

When you are ready to eat just run the mold under running tap water or warm water and EAT!

Makes 6 Popsicle

INGREDIENTS

  • 400gms strawberries (fresh or frozen as long as they are sweet)
  • ¼ cup of sugar (optional, you can use more or less depending on your taste)
  • 1 tsps lemon juice
  • ¾ cup of yogurt
  • 1 cup ice cubes

METHOD

  1. Place the strawberries and the ice cubes in a blender and blend till smooth, add most of the  sugar. At this point you can sieve the juice if you like. I did not as I LOVE the feel of the strawberry ‘seeds’ in my mouth.

 

2. Take about ¼ of the strawberry juice to the yogurt and mix very well. Taste for sugar. You can add if you like. Then add the lemon juice to the strawberry juice.

3. Now put put the mixtures 1/3 of the way into a popsicle mold. Alternate between the molds and put into the freezer for about 30 minutes or so till fully set. At this point if your popsicles sticks are long place them in and freeze for another 15-20 minutes

 

4. Add the alternate mixture to the one you already have in the mold 1/3 of the way ( i.e if you had put the yogurt mixture at the bottom, now put the strawberry one and vice versa)  and freeze for another 45 minutes or so.

5. Remove from the freezer, fill the last 1/3 with an alternate mixture then place in the top if it doubles up as a lid and freeze for an hour or until you’re ready to eat. HAPPY EATING!!

So of late I’ve been quite interested in West African cooking (No I don’t have a man from that side of the world) for a while actually I’ve been looking for way to make plantains differently. So during my search I run into a site called My Belle Don Full and the first dish she had was this amazing sounding coconut rice. For me coconut rice has always been just that rice with coconut milk/ cream and sometimes a little sugar or chilli. What this lady had done was something totally different from our Kenyan “norm”.

 

She had added roast chicken, carrots, onions, fish etc to coconut rice. I found it quite interesting and just had to try it. I have done it a few times over the last few months and I LOVE it each and every time. I know it sounds unconventional but try it I promise you that you will love it.

 

I changed a few things a bit, for example I do not always use the carrots; I don’t think it makes such a big difference and I also do not use crayfish as I have NO idea where to get it so I substitute it with fish sauce. Do not leave this out as I think it adds an amazing flavour to the rice. I tried it without and it was not as tasty.

Coconut Rice (Nigeria style)

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 6

Ingredients

  1. 2 cans of coconut cream/ milk + water if needed to make 8 cups of liquid
  2. 4 cups of Rice- cleaned
  3. 1 whole roast Chicken – I got mine from Kenchic I just asked them not to deep fry it (you can add or substitute fish, beef or goat meat)
  4. 1 Medium onion
  5. 1 small bunch of spring onions
  6. 2 tablespoon fish sauce
  7. 2-3 Scotch bonnet peppers
  8. 3 Medium carrots, grated
  9. 2 seasoning cubes (I used knorr chicken cubes)
  10. Salt to taste

Instructions

Put the coconut milk in a clean saucepan and the water Add chopped chilli peppers, onions, and carrots Add the seasoning cubes, salt, fish sauce Slowly bring the coconut milk mixture to boil for approximately 10 minutes

Add the chicken, Slowly mix the ingredients in the saucepan

Add in the rice and cook for 10-15 minutes until the coconut milk starts to dry down. Reduce the heat and cover the sauce pan. Cook until the rice is ready.

If the fluid completely dries down before it is cooked you can add ½ cup of water or stock

Remove from the heat and serve immediately! HAPPY EATING!!

French Toast

Who doesn’t remember mayai toast?? (Directly translated to egg toast)

 

They were such a treat when I was growing up. Its one of those things that mum made when she was happy with us and wanted to make us smile without necessarily labouring in the kitchen for hours.

 

So the other day I walk up feeling all ******* (insert word for how ever you feel after a night out) and hungry. I really did not feel like cooking but I craved something sweet but who was about to bake while feeling like I they were run over by a Nissan Hardbody? So I decided to do French toast the mzungu way. By this I mean our mother mostly put just eggs and salt. The other way of doing it is to add milk and a bit of sugar. I also added some triple sec to mine for the boozy lemony flavor. I REALLY enjoyed this whether it was the extreme hunger or just the flavor who cares they were great. Hope you will enjoy them too. HAPPY COOKING!!

 

French Toast

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 2

Ingredients

  1. 4 slices of bread
  2. 1 tablespoon flour
  3. ¼ cup of milk
  4. 2 eggs
  5. ¼ teaspoon of cinnamon
  6. 1 teaspoon sugar
  7. ¼ teaspoon vanilla essence
  8. 2 tablespoons triple Sec (Optional)
  9. pinch of salt
  10. butter or oil for cooking

Instructions

Put flour into a shallow bowl; add sugar, salt and cinnamon mix well.

In a separate bowl whisk the milk, egg, triple sec and vanilla together. Whisk into the flour mixture

Dip each slice of bread into the mixture and allow to soak up the mixture.

Heat butter or oil in a pan and cook each side till golden brown.

Serve with fruit. HAPPY EATING!!
