Banana Nutella Oat Muffins
My brother is a junkie. No, maybe that is too harsh a word to use, let’s be nicer and call him an addict. He has no control over his love, his lust and his obsession. Unfortunately, he has all the symptoms of an addict; he can do anything to get his fix, by anything I mean, cheat, steal or kill for it! Once he gets his high he is all over the place, happy as diva with new heels on, he talks to everyone and asking how they are fairing.
Sometimes I feel sad about my brother’s addiction. I feel like he got it from me as I had the same addiction when I was younger. He’d see what I did and go ahead and do the same thing later. But I got over it and he is no longer a child so it’s about time he got over his addiction, he is a grown man now goddamit. My brother, Charles, is a Nuttela addict.

The boy is compeletly in love with nutella. If he could he’d marry it. Sleep with it every night then have his way with it again for breakfast.
These muffins were made with him in mind, I thought I needed to make it a little healthier so the banana and oats came in handy. Charles did not like the oats in this; he said it made the muffins taste a tad bit too healthy for his addict self. I loved them, I loved the texture and that they had nutella yet did not have too much sugar. Let me know what you think.
Ingredients
- 2 cups flour
- 1 cup old fashioned oats
- ½ cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 egg
- ½ cup milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 bananas, mashed
- 12 teaspoons Nutella
Instructions
Preheat oven to 190 degrees .
Combine all the dry ingredients in a bowl
In a separate bowl, beat egg. Add milk, oil, vanilla and mashed bananas and stir until well combined.
Add flour mixture to the banana mixture and mix until ingredients are incorporated, do not over mix
Line a 12 muffin pan with muffin holders or generously apply oil or margarine.
Divide batter evenly in the tin.
Add a teaspoon of Nutella to the top of each muffin and gently cut Nutella into batter with a knife or toothpick to produce pretty swirls.
Bake at 190 degrees for 17-20 minutes or until toothpick comes out clean.

The Weather in Nairobi has been scotching hot the last few weeks definitely not weather that inspires you to make a cuppa. But being a typical Kenya or should I say a mathe (mother or oldish woman) in the making I love my tea on weekend mornings. On weekdays I barely have time to eat breakfast leave alone time to brew (not sure if tea is brewed J ) a nice cup of tea. So Saturday mornings I wake up make pancakes (See my challenge of making 52 different pancakes this year) put my spices in a pestle and mortar pound pound and make me a nice cup of tea. I love this routine. This tea is fantastic. It’s nothing the like supermarket tea masala. It’s spicy and smooth and its fantastic on cold mornings. The rosemary leaves in tea is a always a winner for me, you can use the rosemary leaves alone or even mix it with your supermarket masala. It is great. Ingredients
- 500ml milk
- 400ml water (I like my tea milky so this can be adjusted depending on your preference)
- 5 pieces cardamom
- 1 tablespoon dried rosemary leaves
- 3-4 pieces of dried ginger (available at Indian spice shops, bought mine in Mombasa, you can use a teaspoon of ginger instead)
- 3 pieces cinnamon sticks
- 2 pieces black peppercorn
- 1 tablespoon tea leaves
Instructions
Bruise the spices in a pestle and mortar. NOTE I said BRUISE not grind meaning just pound up to break them but not to completely grind them
At this point make the tea as you normally would with your normal tea masala
How I do it; I put everything in at one and put the mixture on low heat and let it brew for about 10-15mins till it boils. This was my tea gets nice and dark

remember last month when i told you guys about the Adventurous Cooks Club|? did you try the Chicken Biriani? I really hope you did.
This time the Cooking challenge is hosted by Leo Tunapika? she thought it would be great if we made a simple desert and this one was just perfect because apart from being simple its also healthy or mostly healthy especially if you use dark chocolate. Wendy Wahito is also to do a version of this so check it out too.
This is very simple you just need two basic ingredients
We start by slicing the bananas. You can cut a banana into 2 or 3 inch slices OR you can slice one into two to make a larger pop. i did both
We then melt the chocolate, I melted mine in the microwave but this is a tricky method as you can easily burn the chocolate and it can’t be recovered. If you decide to use the microwave do it in 10 second intervals trying to stir after each session. if this scares you, boil water in a small pot, place the chocolate in a large bowl and place on top of the hot water, stir continously till it melts
Next dip half the slice into the chocolate or the tip of the halves into the chocolate and set aside.
You can have the chocolate banana pops plain or It is that simple, let the chocolate harden or you can add some sprinkles, here you can use anything, nuts, shaved or desiccated coconut, colorful sprinkles. I used chopped cashews. I bought them at chandarana did not even know they existed
