Banana Nutella Oat Muffins
My brother is a junkie. No, maybe that is too harsh a word to use, let’s be nicer and call him an addict. He has no control over his love, his lust and his obsession. Unfortunately, he has all the symptoms of an addict; he can do anything to get his fix, by anything I mean, cheat, steal or kill for it! Once he gets his high he is all over the place, happy as diva with new heels on, he talks to everyone and asking how they are fairing.
Sometimes I feel sad about my brother’s addiction. I feel like he got it from me as I had the same addiction when I was younger. He’d see what I did and go ahead and do the same thing later. But I got over it and he is no longer a child so it’s about time he got over his addiction, he is a grown man now goddamit. My brother, Charles, is a Nuttela addict.
The boy is compeletly in love with nutella. If he could he’d marry it. Sleep with it every night then have his way with it again for breakfast.
These muffins were made with him in mind, I thought I needed to make it a little healthier so the banana and oats came in handy. Charles did not like the oats in this; he said it made the muffins taste a tad bit too healthy for his addict self. I loved them, I loved the texture and that they had nutella yet did not have too much sugar. Let me know what you think.
Ingredients
- 2 cups flour
- 1 cup old fashioned oats
- ½ cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 egg
- ½ cup milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 bananas, mashed
- 12 teaspoons Nutella
Instructions
Preheat oven to 190 degrees .
Combine all the dry ingredients in a bowl
In a separate bowl, beat egg. Add milk, oil, vanilla and mashed bananas and stir until well combined.
Add flour mixture to the banana mixture and mix until ingredients are incorporated, do not over mix
Line a 12 muffin pan with muffin holders or generously apply oil or margarine.
Divide batter evenly in the tin.
Add a teaspoon of Nutella to the top of each muffin and gently cut Nutella into batter with a knife or toothpick to produce pretty swirls.
Bake at 190 degrees for 17-20 minutes or until toothpick comes out clean.
