New Beginning
I started this blog almost 7 months ago in December 2011. That was after me having the idea since 2010 but never really having the “syke” to start. when I started i never imagined it would be this “hard”. I had assumed that because I LOVED to cook it would be as easy as cooking, taking a photo and posting…. BUT it is not that easy. So many times I find that I have to research on food before I cook, I have to look for new ways to make things, new ingredients, new recipes, new everything. Although this is quite exciting it is also quite time consuming but i have loved every single moment of it.
Today i start a new site, hopefully this will be a new lease of life for me and my blog. I still have quite a long way to go as i work on this site, new pages to put up, colors to change, things tweek here and there but soon it will look very fabulous. Lemony Chicken, Prawn & Chorizo Jambalaya
So last week I came from Nairobi feeling like I did not have much to post on. I had no idea what to cook or what to try. I looked into my freezer in confusion!!! When I saw the packet of cocktail prawns I remembered an article in Januray’s GoodFood and another in February’s issue.
In the January’s issue they had a chicken and chorizo jambalaya and in February’s they had a lemony prawn and chorizo rice pot. I decided to marry the two and see how it came out. The end product reminded me a lot of the Spanish Paella and after doing some research I discovered that the jambalaya is a Caribbean dish that has its roots in Spanish and French cuisine so that explains the similarities. I made mine with way too much chilli so it was a bit hard to eat but I still enjoyed the flavours.
The best thing about this dish is that it’s a one pot meal; you do not need to make anything else on the side as the dish is complete by its self. HAPPY COOKING!!!
Ingredients
- I tablespoon of olive oil
- 1 chicken breast
- 200gms peeled prawns
- 75 gms chorizo ( I used 2 spicy pork sausages, but you can get chorizo at the Deli in the supermarket)
- 1 onion sliced
- 1 red pepper, thinly sliced
- 2 garlic cloves, crushed
- 1 red chilli, chopped ( more or less depending on personal taste)
- ½ teaspoon turmeric
- 200g can tomatoes
- Zest and juice of 1 lemon plus extra wedges to serve.
- 500ml hot water ( if you can get chicken stock the better)
Instructions
Heat oil in a large frying pan and brown the chicken for about 5-8 mins until golden. Remove and set aside.
Add in the onion and cook until soft. Add in the pepper, garlic, chorizo and chilli.
Stir the chicken back in, add the turmeric with the rice, add the tomatoes and ensure the rice is coated. Pour in the water, cover and simmer for about 15-18mins.
Uncover then stir. The rice should be almost tender. Stir in the prawns and a little more water if the rice is too dry.
Cook for about 2 or more minutes until the prawns are pink and the rice is tender and cooked.
Stir in the lemon zest and juice. Serve immediately. HAPPY EATING!!!!

Kitchen Garden Update-2
Its been about a month and a half since I started my little garden. I was not too happy with my progress when I wrote about it earlier in this month and now two weeks later I think I am even sadder (is that even a word?)
In the previous week or so there had been a lot of controversy in my office surrounding the guy who works for me and my friend. The guy is VERY hard working I love him but there were issues with him watering our plants and doing other things. After a lot of push and pull he was in the end allowed to work on our gardens but not during his official working hours. In as much as this was annoying the worst part during that week was when one night, I was in Nairobi at the time, my plants were watered and everything was good then the next morning the guy who waters them came and found that my carrots, chillies and spring onions had ALL BEEN UPROOTED!!!!!

e to a garden that I am working hard on and uproot my plants. I had actually thought that maybe it was a mistake but the term that was used to explain what was found was “kulikaa nikama mtu alikuwa anavuna mhogo” ( it looked like someone was harvesting yams) meaning that it was a planned “harvest”. But anyway……..
My plants, the ones that survived seem to be doing well.
My baby spinach have really grown. We decided to cover the seed bed with a mosquito net to stop the birds from feasting on them.
The lettuce, that I had previously thought had refused to grow, have also really sprouted and seem to be doing good.
The dhania (coriander) are also doing pretty well.

All in all I think I’m not doing too badly. Another update will come soon.
