Viazi Karai (Panfried Potatoes)

Hi Foodies!!! It’s been a LONG minute, a month to be exact. I have really missed you my dear foodies. I know I kind of abandoned you, I have never left you unattended for this long but life happened, I got too busy with work and stuff but I’m back now and I promise never to leaveyou without fresh ideas for this long again. Hope you still love me 🙂
So this recipe was inspired during my December/ New Year’s holiday in Lamu. During my stay there I’d have breakfast in this local restaurant that served us viazi karai with beef mishikaki (skewered meat) or with mbaazi (pigeon peas cooked in coconut milk) and it was DELICIOUS.
I had never had viazi karai before that and I just had to come home and try them. I asked them how they made them and they gave me the basic ingredients I added a few extras and this is what I ended up with. its pretty easy, sort of like making bhajias just that you use normal flour, mix it up with some spice and end up with a batter. dip the potatoes then shallow fry. How easy is that?? and the best part…you most probably have all the ingredients in your pantry already, so no need to rush to the supermarket.

Ingredients
- 10 medium sized potatoes, cut into circular shapes
- 2 teaspoons garlic powder
- 2 cups all purpose flour
- 1 cup of water
- small bunch of dhania (Coriander)
- chillies (As desired)
- pinch of tumeric.
- salt and pepper to taste
- oil for frying.
Instructions
Put some water in a pot and add the garlic powder, boil potatoes till tender. Take care not to over cook.
Mix flour, dhania, chillies, turmeric, salt and pepper then add the water a little at a time to make a thick paste.
Dip potatoes in the batter and fry in hot oil till golden. Serve with Kachumbari or roast meat.

Baked Spicy Sweet Potato Fries
There are things in life that you NEVER imagined would please you or excite you. You know the type of thing that you just do coz you know it’s good for you eg walking to the market instead of driving or drinking water instead of Vodka (Mona yes this is for you) or taking Tea instead of Whiskey (Kiboi…:-) Well for me eating Ngwaci (sweet potatoes) is one of those things.
I bought ngwaci for the 1st time in my life towards the end of last year, coz those are things I eat at home when I’m visiting the folks or up country. Ngwaci’s are tasty but to me there is nothing special about how they taste but the moment I took a bite of these sweet potato fries all my taste buds were UP. Like a weed junkie who has just been given a shot of heroin and you wonder why no one ever told you there better ways to awaken your taste buds.
The fries were spicy and sweet, hot and sweet, my mouth had its own mini “O” because the pleasure was sooo damn unexpected. I mean who knew that ngwaci’s could taste like this? and when you add the Sour cream/sweet chilli deep HEAVEN, its just heaven in you mouth. I promise you even your kids will be begging you for more. Ingredients
- 3 medium sized sweet potatoes, peeled and chopped into "fries"
- 2 tablespoons of oil
- juice of half a lemon
- 1/4 teaspoon of cayenne pepper (more if you want it hotter)
- 1 tablespoon of garlic
- 1/2 teaspoon of ginger
- 1/4 tablespoon of garam masala
- 1/4 cup sweet chilli sauce
- 1/2 cup sour cream
Instructions
Heat oven to 200C.
In a bowl mix all the spices together then add the sweet potatoes. toss in the marinade and make sure they are well coated. Place in a baking sheet that has been covered with foil. Bake for about 30-35 mins but make sure to check for doneness after 25 minuted depending on your oven.
Put the two ingredients in a bowl, either side by side, one on top of the other or mix. Your choice

Satay Chicken skewer

Sometimes you get home from work and you can’t even be bothered to think let alone cook and eat. But our bodies are our bodies they need nourishment and at 8pm you start to starve and you think what would be a quick tasty meal to fix and …………….. you come up with this. Serve it with a salad and call it a night. Goodnight………. HAPPY COOKING!!
Ingredients
- 2 boneless chicken breast cut into strips
- 1 teaspoon ground coriander seeds
- 1 teaspoon ground cumin seeds
- 2 teaspoon fish sauce
- 1 teaspoon oil
- 1 teaspoon soy sauce
- 1 tablespoon minced garlic
- ½ teaspoon chili flakes
- salt and ground pepper
- ¼ cup creamy peanut butter
- 2 tablespoons vinegar
- 1 teaspoon honey
- ½ teaspoon turmeric
Instructions
If you’re using wooden skewers soak them in water for 30 minutes so that they don’t burn.
Mix the spices, 1 teaspoon fish sauce, oil, ½ tablespoon garlic, ¼ chilli flakes and salt and pepper. Rub this on the chicken, then thread the chicken onto the skewers
Heat a grill pan or frying pan. Cook the skewers for 4-5 minutes on each side.
To make the dip mix all the remaining ingredients, you could add some water or coconut milk if you want it to be more saucy.
