Chilli Mango Prawns
I am not sure there is a season in my beautiful country than mango season. It comes with so much sunshine. So much happiness and celebrations. Mango season starts towards the end of the year just when the rains stop and as the sun begins to shine Kenyan’s begin to celebrate. The number of weddings, Ruracios (dowry ceremony), itara (the ceremony where Kikuyu mothers and aunties go to visit the Kitchen in the home where the daughter will be married) then there are baby showers, bridal showers, then Jamuhuri day and Christmas and new years then comes January and even though you have too many bills to pay the sun still shines every morning so you always have a reason to smile.
There is something about mangoes and chilli that is so nostalgic to Kenyans. It is something majority of us ate in our childhood. Almost ripe local mangoes with salt and chilli powder. Give this to any Kenyan aged between 20 and 40 years and they will just love you for the good memories you brought back to them. The sweetness of the mango coupled with the slight bitterness of it not being completely ripe then add some salt and chilli. Mini heaven in your mouth.
Then there is something about prawns,lemon and chilli. It is a match made in heaven. Such simple flavours but they dance in your mouth.
Now a combination of the two is just out of this world. the chilli mango, the lemony prawns the flavours just marry and do things together in your mouth if you get what I mean hahah. This is such a quick meal. For those days you need to impress or want to make an elaborate menu using as little time as possible.

Ingredients
- 500g prawns
- 3 cloves of garlic crushed
- 1/4 cup olive oil or any mild tasting vegetable oil
- Juice of 2 lemons
- 2 almost ripe mangoes- diced (I used apple mango but any type will do)
- Chilli flakes
- Salt
Instructions
Mix the garlic with prawns and a dash of salt, heat the oil and once hot cook the prawns for about 3 to 4 minutes turning after two minutes till they are pink.
Sprinkle a little chilli flakes. Remove and set aside.
Mix the diced mangoes with salt and chilli flakes.
Serve them in Chinese soup spoons as I did placing one prawn and one piece of mango then sprinkle some extra chilli flakes if you wish.
Alternatively skewer the mango and prawn in a cocktail or tooth pick and serve
