#ILoveMondays; Chicken Boerewores in a Sweet Basil Coconut Sauce
Anyone who knows me knows how much I love to experiment with food from other cultures. I enjoy Boerewors. They are the South African version of Mutura. They are quite tasty and very versatile, you can grill or bake in an oven, gill on a bbq, stew etc. Kenchic offers a whole new twist on Borewores. Not beef or pork but Chicken. How amazing is that?
The last time I gave you guys a boerewors recipe, it was pork. The recipe is here. The recipe was so popular everyone who made it loved it. So what I decided to do was improve on it. The sweet basil coconut sauce makes this dish a sure winner. The texture of the potatoes and mushrooms add quite a unique balance to the dish. I love basil. I think it is one of those herbs that Kenyan’s do not use enough of or maybe the just do not know about.
You can have this dish with rice or chapo. I bet you will love it.

Ingredients
- 500g Kenchic Chicken borewors, cut up into 2 inch long strips
- 1 punnet of button mushrooms
- 4 Potatoes, peeled and cut into quarters
- 2 teaspoon garam masala
- 1 cup coconut milk
- ½ cup of sour cream
- 1/2 cup African Kaya's Sweet Chilli sauce
- 1 onion sliced
- 3 cloves of garlic, crushed
- Small piece of ginger, crushed
- Juice of 1/2 a lemon
- Small bunch of dhania.
- Small bunch basil
- Salt
- Oil
Instructions
Place the potatoes in a pot of water, add salt and 1/2 the garam masala. Let it boil till half cooked.
Meanwhile, put a little oil in a pan. Cook the mushrooms till browned and set aside. Add a little oil. Once hot add the boerewors and cook until browned. Add in the half cooked potatoes and brown then add the mushrooms
Add in the onions. Cook till the onions are translucent. Add in the garlic and ginger and cook till fragrant. Add in the coconut milk, sour cream and sweet chili sauce. Stir and let cook on medium heat for about 10 minutes until the potatoes cook through.
Add in the lemon juice, dhania and garam. Cook for 2 minutes and serve.
This dish tastes even better the next day.
