It is amazing how one can grow to love something that they used to detest so much. There is a time in my life when I would say I am eating seafood, what I actually meant was I am eating fish, tilapia to be exact!! and even that I did not enjoy that much.

I remember when I lived in Melbourne there was this popular little place that was very popular with seafood. When i say very popular I mean VERY VERY popular.  A man I used to know back then, heheh yes that means ex, used to love going there and on some nights we would wait even 1 hour, 30mins outside and another 30 mins at the bar, for space to sit and watch him eat the hell out of giant prawns cooked in chili garlic oil. I did not get to eat. The glee on his face, how he licked his fingers and closed his eyes as he ate. Each time he dipped his bread into the chili oil, the look on his face changed you could swear he was hearing his taste buds sing to him in thanks giving! I couldn’t stand the smell. I actually never ate there. We would either get my dinner before or after our date at the Sea Food Joint.

I regret those nights. I wish I could go back in time to taste those king prawns. They are actually the inspiration behind my fav way to make prawns. Olive oil or peanut oil, garlic, chilies and dhania. Simple!

Quick Chili Garlic Prawns

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 4 to 6

Ingredients

  1. 1 kg prawns, deveined and shelled if you wish (I like queen)
  2. 4 cloves garlic
  3. 5 or more dried red chilies
  4. 350ml olive or peanut oil
  5. Bunch of dhania
  6. Salt and pepper to taste

Instructions

Clean the prawns well in running water, pour some white vinegar on it to remove any germs or smells. Pat dry with a kitchen towel.

Pour the oil in a wok, heat through. Once hot add the garlic and the chilies.

Once the garlic is fragrant and begins to change colour add in the prawns and some salt. Cook turning until the prawns are pink. Sprinkle some dhania.

Serve with toasted bread.
