Baked Spicy Sweet Potato Fries
There are things in life that you NEVER imagined would please you or excite you. You know the type of thing that you just do coz you know it’s good for you eg walking to the market instead of driving or drinking water instead of Vodka (Mona yes this is for you) or taking Tea instead of Whiskey (Kiboi…:-) Well for me eating Ngwaci (sweet potatoes) is one of those things.
I bought ngwaci for the 1st time in my life towards the end of last year, coz those are things I eat at home when I’m visiting the folks or up country. Ngwaci’s are tasty but to me there is nothing special about how they taste but the moment I took a bite of these sweet potato fries all my taste buds were UP. Like a weed junkie who has just been given a shot of heroin and you wonder why no one ever told you there better ways to awaken your taste buds.
The fries were spicy and sweet, hot and sweet, my mouth had its own mini “O” because the pleasure was sooo damn unexpected. I mean who knew that ngwaci’s could taste like this? and when you add the Sour cream/sweet chilli deep HEAVEN, its just heaven in you mouth. I promise you even your kids will be begging you for more. Ingredients
- 3 medium sized sweet potatoes, peeled and chopped into "fries"
- 2 tablespoons of oil
- juice of half a lemon
- 1/4 teaspoon of cayenne pepper (more if you want it hotter)
- 1 tablespoon of garlic
- 1/2 teaspoon of ginger
- 1/4 tablespoon of garam masala
- 1/4 cup sweet chilli sauce
- 1/2 cup sour cream
Instructions
Heat oven to 200C.
In a bowl mix all the spices together then add the sweet potatoes. toss in the marinade and make sure they are well coated. Place in a baking sheet that has been covered with foil. Bake for about 30-35 mins but make sure to check for doneness after 25 minuted depending on your oven.
Put the two ingredients in a bowl, either side by side, one on top of the other or mix. Your choice

Rice Flour and Coconut Pancakes (Vibibi)
I once heard that the best way to discover a new way of making something is to have a kitchen disaster. I never fully believed this until the day i tried making vitumbua.
I got the Vitumbua recipe from Fauzia’s Kitchen Fun and I was so psyked to go try it. I followed the instructions to the letter (or so i thought) and i could not wait to eat the Vitumbuas. I should have known something was very wrong when my batter did not really rise but i ignored that sign, when i put the batter in the pan it did not rise like it should to form a mandazi like snack but it instead made a well risen pancake, and boy did they taste GREAT. I made too many any I ate some gave out some BUT after a few hours they had a funny taste i think from the yeast fermenting.
When I reread the recipe I figure out my mistake, I was using dry yeast I think instead of the instant (or something like that) and I needed to activate my yeast first by putting it in warm water and sugar which I did not so that was why my vitumbuas turned into pancakes and why the yeast tasted bitter later.
Good thing was, I now wanted to try and make pancakes using the same recipe. That idea stayed on my mind then one day as i was shopping for my Foodie Penpal I saw that they had rice flour at Nakumatt so I bought it and made this using a slightly different recipe as the original one from Fauzia used rice that you soaked and blended. The pancakes were to die for. I am sure you will love it.

INGREDIENTS
Ingredients
- 1 cup rice flour (available in all leading supermarkets)
- 1/4 cup of sugar
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon cardamon
- 1 cup coconut milk, plus a little extra if needed.
Instructions
Mix the first four ingredients well in a mixing bowl, once well blended add in the coconut milk and whisk to your desired consistency. Not to thin as you want the pancakes to rice well.
Heat some oil in a pan, pour batter into hot pan and spread out to desired pancake size, let the pancake cook till the top starts forming bubbles. turn the pancake and cook for about a minute and remove.Serve hot.

If you do not have rice flour you can use about a cup of raw rice. Soak the rice overnightthen blend all ingredients in a blender
Banana Pancakes
Can you imagine making pancakes with just TWO ingredients? YES I said TWO all natural ingredients. Just bananas and eggs. No sugar, no flour, nothing artificial. HOW EXCITING. When I saw this on Pinterest I just had to try it. The original recipe used 1 banana and two eggs and it was just 250 calories for the whole batch. I added 1 banana so guess this should be 350 calories and you can’t finish the whole batch so you will only consume about 175 calories or less. Use cooking spray and you reduce your calories even further. I know I am speaking like a calorie freak but HOW EXCITING. Plus they taste AWESOME and they are super easy to cook. You just have to try them. HAPPY COOKING!!

- 2 bananas
- 2 eggs
- ½ teaspoons cinnamon or ½ teaspoon vanilla (totally optional but you can also add both)
Instructions
EASY, mush up the bananas completely using a fork, add the eggs, and mix well. Add the cinnamon/vanilla if using. Coat pan with oil or spray with some oil. Pour some batter onto the pan once its medium hot. Let the batter cook for about 30 seconds until the top begins to harden. Flip to cook the other side. AND YOU’RE DONE.
