Pumpkin French Toast
So as I said in my previous post, we really do not have a pumpkin eating or pumpkin using culture in Kenya. The only thing pumpkins are famous for is feeding children. So with all the recipes up on Pinterest that were using I just had to jump on the bandwagon and try something.
I’ve tried a couple of recipes but this is so far my favourite. The flavours were amazing. Couldn’t believe it was made with pumpkins. Try for breakfast sometime for your family; no one will even guess that you used pumpkins, so you will get rave reviews while feeding them to a healthy yet tasty breakfast.

Ingredients
- 3 eggs
- ½ cup milk
- ¾ cup pumpkin puree
- 1 teaspoon mixed spice (if you don’t have mix some cinnamon, ginger, cloves and nutmeg. The proportions should be more cinnamon, then ginger then cloves then nutmeg)
- 10 slices bread
Instructions
In a large shallow bowl combine the eggs, milk, pumpkin and spice and whisk together until thoroughly mixed. Set aside.
pour some oil into a pan bring to medium-low to medium heat. Dip each side of a piece of bread into your egg/pumpkin mixture to coat and then shake off any excess mixture. Place the coated bread on the pan and repeat until the pan is full. Cook for 1-2 minutes or until the bottom is golden brown and then flip and cook an additional 1-2 minutes. Repeat the process till all the bread is cooked. EASY PEESY.

Quickie Chicken Sandwich

Well as the name above suggest this will be a QUICK one.
I really did not feel like making lunch yesterday but I was hungry and I had to eat. I came into the house at 1.03 by 1.20 I was eating. I made two sandwiches using small slices of brioche bread and a small 130 gram piece of chicken breast I thought id be able to finish it all but I only managed to go through about 1.25 of it.
OOH you can add your own twist to this, add some bacon, an egg, ham, cheese, pineapple. ANYTHING you like. HAPPY COOKING!!
Well here goes.
You will need
- 130 gram chicken breast ( or a half of the chicken breast)
- 1 ½ teaspoon garlic
- 1 small onion
- 2 leaves of lettuce, sliced
- ½ tomato, diced
- 1 teaspoon light mayonnaise
- 4 slices of bread
- A little butter ( I used a teaspoon)
- 1 teaspoon of oil
- Salt and pepper to taste
Method
- Slice your breast to create a butterfly. Pound it down with a meat mallet or rolling pin. Smear 1 teaspoon garlic and some salt and pepper. Let it rest as you make your bread
2. Apply the butter on one side of the bread and toast it on a pan till brown and place on a plate
3. Put a ½ teaspoon on oil in the pan and sear your chicken breast for about 4 mins on each side till cooked through. Place on top of the bread
5. As the chicken cooks, put the lettuce, tomato and mayonnaise in a bowl put in a little salt and black pepper and mix well.
6. Once the chicken is cooked add the remaining ½ teaspoon of oil and the onions, let it cook for about 2 mins, add the remaining ½ teaspoon of garlic and some chilli flakes if you like. Cook for a further 1 min. and you’re done.
7. Now to assemble. Place your bread first, then the chicken, then the onions then the lettuce mixture and top with bread, VIOLA. Quickie lunch. HAPPY EATING

French Toast
Who doesn’t remember mayai toast?? (Directly translated to egg toast)
They were such a treat when I was growing up. Its one of those things that mum made when she was happy with us and wanted to make us smile without necessarily labouring in the kitchen for hours.
So the other day I walk up feeling all ******* (insert word for how ever you feel after a night out) and hungry. I really did not feel like cooking but I craved something sweet but who was about to bake while feeling like I they were run over by a Nissan Hardbody? So I decided to do French toast the mzungu way. By this I mean our mother mostly put just eggs and salt. The other way of doing it is to add milk and a bit of sugar. I also added some triple sec to mine for the boozy lemony flavor. I REALLY enjoyed this whether it was the extreme hunger or just the flavor who cares they were great. Hope you will enjoy them too. HAPPY COOKING!!
Ingredients
- 4 slices of bread
- 1 tablespoon flour
- ¼ cup of milk
- 2 eggs
- ¼ teaspoon of cinnamon
- 1 teaspoon sugar
- ¼ teaspoon vanilla essence
- 2 tablespoons triple Sec (Optional)
- pinch of salt
- butter or oil for cooking
Instructions
Put flour into a shallow bowl; add sugar, salt and cinnamon mix well.
In a separate bowl whisk the milk, egg, triple sec and vanilla together. Whisk into the flour mixture
Dip each slice of bread into the mixture and allow to soak up the mixture.
Heat butter or oil in a pan and cook each side till golden brown.
Serve with fruit. HAPPY EATING!!
