Baked eggs with spinach, tomatoes and bacon

I have never been a big fun of greens let alone spinach. But of late I am discovering new and tasty ways of preparing it that has made it my “new found” green. This meal is pretty healthy (minus the bacon). One serving is about 176 calories, so it’s great for those who are calorie counting. Add a slice of toasted brown bread a little butter and end up with about 300 calories. Anyway as fate would have it on the day I was to try out the recipe I had just gotten some bacon and thought what the hell, so I put some in. It turned out great. This can make a great starter, nice brunch or light meal. I am sorry for the horrible picture quality 🙁 . Enjoy

Baked eggs with spinach, tomatoes and bacon

Yield: 4

Ingredients

  1. 3 bunches of spinach
  2. 1 teaspoons of minced/ crushed garlic
  3. 4 tomatoes
  4. 1 tsp chilli flakes
  5. 8 rashers of bacon
  6. 4 eggs
  7. dhania

Instructions

Heat oven to 200°C.

2. Wash spinach and trim off stalks

3. Put spinach in a pan and cover until it just begins to wilt. Add the garlic and mix well.

4. Divide spinach between four ramekins.

5. Cut up the tomatoes, dhania and bacon

6. Mix the tomatoes, bacon, dhania and chilli flakes, season with salt and pepper.

7. Add this mixture to the ramekins with the spinach.

8. Make a small well in the middle of each dish and crack in an egg.

9. Bake for 12-15 minutes depending on how you like your eggs. I kept mine for about 20 minutes.

NB: if you do not have ramekins you can use an oven proof dish. Follow the same procedure but place the eggs on separate ends of the dish.

Apple and Cinnamon pancakes with Cinnamon butter and Syrup

I LOOOOVE pancakes. I think it is one of the first things I learned how to make as a young girl. I like to experiment with new recipes, try new fillings or syrups etc etc. So when I saw a new recipe on this months Good Food magazine I had to try it. So I ended up removing a few things and adding one or two. Hope you guys enjoy it.
Apple and Cinnamon pancakes with Cinnamon butter and Syrup

Yield: 15

Ingredients

    Pancakes
  1. 300g self-raising flour
  2. 1 tbsp bicarbonate of soda• 2 eggs
  3. 280ml butter milk ( buy from super market or alternatively see separate post on how to make your own or what to use as a substitute)
  4. 4 tbsp milk
  5. 85g melted butter
  6. level tsp of cinnamon
  7. 2 small medium eating apples, peeled, cored and grated
  8. butter or oil for frying.
  9. Maple syrup to serve
  10. FOR CINNAMON BUTTER
  11. 85g softened salted butter
  12. 1 tbsp cinnamon
  13. 2 tbsp caster sugar

Instructions

To make cinnamon butter mix all ingredients and wrap in cling film, shape into a log and chill.

Sift the flour.Mix the flour, bicarb, cinnamon and a pinch of salt in a bowl. Make a well in the middle then slowly whisk in the eggs, followed by the butter milk, milk and melted butter. Once mixture is smooth, stir in the grated apples.

Melt a little butter in a pan or pour a little oil. When hot, add 1-3 small ladles of batter to the pan making 1-3 small pancakes (this will depend on the size of your pan)

Cook for 2-3 minutes until it bubbles appear and the underneath are set and golden. Flip and cook for a few more minutes

Transfer to a plate and cover. You can place in a warm oven to keep them warm

To serve stack pancakes on a plate, top with a knob of the cinnamon butter and drizzle with maple syrup.
