I love pastries. Only problem with them is how fattening they are but………………who cares as long as your mouth is happy you can go to the gym later right? RIGHT. Now on to the first problem…..it is so HARD to get a decent pastry in Nairobi! Most places you go to the pastries are too “bready” not soft enough, not buttery enough as in they just don’t melt in your mouth! Well because of this I’ve been thinking of learning how to make my own pasty for the longest time but I had two miserable solo attempts( I will post my failures soon) and I have decided to get some classes. Anyway before my attempts to make my own pastry I made this little sausage rolls using store bought puff pastry. They were a real hit. I tried them again last weekend when I had visitors over and they were the first items to run out. When I made them last weekend I did not have the store bought pastry and my attempts of making my own had failed so I used this dough recipe and they stilled turned out quite good. I would still go for the puff pastry but if you’re pressed for time or find the store bought one too expensive then try the easy recipe you will not be disappointed. HAPPY COOKING!!!

 

EASY SAUSAGE ROLLS

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 20 small rolls

Ingredients

  1. 1 roll of store bought puff pastry (you can get this at the frozen section of the supermarkets)
  2. 400gms spiced sausages (pork, beef or chicken)
  3. ½ a medium onion
  4. 1 tablespoon of butter
  5. 1 tablespoon of garlic
  6. 2 tablespoons of breadcrumbs
  7. Small bunch of dhania (Coriander)
  8. 1 egg
  9. A little milk

Instructions

Preheat the oven to 200 degrees

Put the butter in a pan cook the onions till they are golden brown. Remove and set aside to cool

Skin sausages and put the meat in a large mixing bowl. Mash up the sausage meat with your hands. Add the onions, breadcrumbs, garlic and dhania to the sausage meat. Mix it all up with your hands

Roll out the pastry.

Shape the meat mixture into a long sausage and place it along the long edge of the rolled out pastry leaving some space at the end of the pastry.

Roll the pastry to enclose, cut of the long roll and seal the edge with a fork. Repeat this till all the meat is done. Cut the roll into smaller sized pieces of your choice.

Mix the egg and the milk

Place the rolls on a baking sheet seam side down. Brush with the egg misture.

Bake for 20-25minutes until golden and slightly puffy. Serve warm. HAPPY EATING!!!

Dark Chocolate and Mint Hot Chocolate

HotChocolate_KenyanBlog Who does not love chocolate??????? And who does not love the combination of chocolate and Mint???? If you don’t you must be MAD!!!. I really enjoy a good hot chocolate but unfortunately I am yet to go to any coffee house or restaurant in Nairobi and get good quality hot chocolate. What they offer in all these establishments is milk diluted with WAY to much water then they add 2 teaspoons of Cadbury’s Chocolate and lie that they are giving you Hot Choco, how disgusting. I experimented with this recipe after I was taken to Max Brenner and I instantly fell in love with the place. They make their own chocolate so the place smells divine and they had these big “barrels” where they were churning the chocolate, my GOD if only we had that in Nairobi……… Nway after one too many visits and too much money spent making someone else rich I decided I needed to learn how to make this so I just tried it and it was good, not as great as Max Brenner but way better than what we get served in the restaurants in Nairobi. Anywho a few weeks ago my colleague Molly and I kept saying how much we love Hot chocolate, how we miss it and how sad it is that we can’t get any in Kakuma, then I thought I might just have the ingredients to make one.  So she came over and I made some, we had it with some cinnamon biscuits she got from Nakumatt, it was a small piece of Heaven in the desert. Now that the weather is chilly I’m sure this might just come in handy. Enjoy!!!!   

DARK CHOCOLATE and MINT HOT CHOCO

Prep Time: 3 minutes

Cook Time: 10 minutes

Total Time: 13 minutes

Yield: 4

Ingredients

  1. 1 ltr of Milk
  2. 150 gms good quality dark chocolate (lindt is great, I did not have this at the time so I used dark cooking chocolate)
  3. 2 tablespoons dried mint ( if you can get fresh even better)

Instructions

Heat the milk and the mint in a large saucepan over medium heat until it just starts to boil.

Sieve through to remove the mint

Add the chocolate, stir with a metal spoon until all the chocolate is melted and the mixture is smooth.

Divide among 4 mugs.

You could also use a few drops of peppermint essence instead of the dried or fresh mint but I prefer fresh mint.

  Easy (one bowl) Chocolate cake   A few years back when I really frustrated I went home and decided to bake. I did not have many ingredients so I took what was available out of the pantry and decided to Google for some recipes for cake. I came across an easy chocolate cake and I really liked it.  Truth be told that was also the day I begun to realize how therapeutic baking is. Well since then I have tried many other recipes all revolving around more or less the same ingredients but when I tried this one from All Recipes and I was in love. They have quite a number of them there but try this one first then the others. You will not be disappointed.   From the photos above you can tell that I was not able to get a picture of the whole cake. First time I made it I decided to share it with my friends so as to distribute the calories 🙂 by the time I thought that I should take a photo more than half the cake was gone. On the second Instance one of the friend I gave the cake to loved it so much that she asked me to make it for a bridal shower and I sliced it up before realizing I should have taken a photo! All in All photos or no photo this cake is great you will not be disappointed if you try it. HAPPY BAKING!

 

 

Easy (one bowl) Chocolate Cake

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Yield: 1 cake serves 12

Ingredients

  1. 2 cups white sugar
  2. 1 3/4 cups all-purpose flour
  3. 3/4 cup unsweetened cocoa powder
  4. 1 1/2 teaspoons baking powder
  5. 1 1/2 teaspoons baking soda
  6. 1 teaspoon salt
  7. 2 eggs
  8. 1 cup milk
  9. 1/2 cup vegetable oil
  10. 2 teaspoons vanilla extract
  11. 1 cup boiling water

Instructions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.

In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.

Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
