How to use Blueband in Your Potatoes (Roast potatoes recipe)

Sweet and Spicy Coconut Rice
I love rice, maybe not as much as potatoes but I could eat rice 5 times a week if it were possible. Add coconut to it and I am sold. For this reason I am always looking for ways to make rice more interesting. I loved this rice, it was perfect with a spicy curry. Hope you love it too.

Ingredients
- 2 cups basmati rice
- 400 ml coconut milk can (should give about 2-2.5 cups)
- 1.5 to 2 cups of water to make total liquid 4 cups
- 3 cloves
- 3 cardamons
- 1 piece of cinnamon
- 1/4 teaspoon cumin
- 1 bay leaf
- 1 tablespoon sugar
- 1/3 cup raisins
- 2 tablespoons oil or butter
Instructions
Heat oil in a sauce pan and add all the spices. When they start to pop add in the liquid and sugar. You can add a pinch of salt too Once it boils add in the rice and stir.
Let the rice boil and once the level of the liquid is the same as the rice, reduce the heat to low and cover. let it simmer for about 15 mins. Switch off the heat and leave the lid on for a further 5 mins till all the liquid is gone, the rice is fluffy and cooked through. Add in the raisins and mix well to ensure the raisins are well distributed.
Serve hot with a a stew or curry.

If you find your rice is not cooking as well as you wish, cover with foil and put in an oven heated to 150-180 degrees for about 20mins.
